Berenjenas con queso

I would like to eat more eggplant; the only problem is that sometimes I lack imagination when it comes to preparing it. So, I look in the fridge, see this big eggplant in there, and I say to myself, "hmmm."

Then I remember a funny poem by sixteenth-century Spanish poet Baltasar de Alcázar:

Tres cosas me tienen preso
de amores el corazón;
la bella Inés, el jamón
y berenjenas con queso.

("Three things have my heart / imprisoned by love; / beautiful Inés, ham / and eggplant with cheese"). Aha! I dig out my trusty Spanish cookbook (Penelope Casas's The Foods and Wines of Spain), and there is a recipe! I couldn't exactly follow it to the letter (I didn't have the ingredients), but I could use it as an inspiration.

I peeled the eggplant and cut it into 1/2 inch slices, put some chicken stock in a pan and simmered the eggplant until it was tender. In another pan, I sauteed some finely chopped onions just to the point where they were starting to turn golden. I laid the eggplant in a baking dish, added the onions to the stock (which had reduced by this time), and poured the mixture over the eggplant. Then I grated a generous amount of pecorino romano over the top, ground some pepper over it, and finally baked it in the oven for 15 or 20 minutes.

It was good!

Honestly, tho folks...

I have had the same experience. I look at the beautiful eggplant in the store and think I that Iwant to have this at home. Then I don't know what to do with it. I have prepared several dishes with them such as babaganoosh and mousaka while working in various restaurants, although it seems every dish is labor intensive.
Your dish sounds more like my style of cooking and I will keep it in mind the next time I have a stare down with a beautiful eggplant at my local grocer.

went to the store and got me one of those purple beauties....and brought it home....but not before the check out gal said "this is the first time i have ever held an eggplant...and the bagger said the same....so im f course being a helpful hannah,gave them your receipe....and they are going to try it too....arent we having fun! you could be the next gallaoping gourmet mark...this is mary beth....marna's mom...lolstill on top of the hill...in fact we all are now again...

Wow, Mancelona has eggplant? Getting pretty exotic up there!
And did you know that spell checker wants Mancelona to be Barcelona?
hmmm...I wonder if spell checkers in Spain suggest Mancelona to them. It's all connected to this recipe!
