Fusion Fajitas

Here is a fusion take on Mexican fajitas that I came up with this evening. Start with skirt steak and marinade it in minced garlic, black pepper, soy sauce, Chinese rice wine, some chili flakes and a small amount of sesame oil. Heat your grill up outside to a nice high temperature and cook the meat. Put the cooked steak onto a cutting board and cut it into fajitas (across the grain).

Shitaki mushrooms go with it. Slice the mushrooms into almost julienne strips, and sauté them in olive oil with garlic. Add some stock or water if they start to dry out. Serve the fajitas and the mushrooms with Mexican flour tortillas. The steak and mushrooms go well together, and to me there is enough flavor that you don’t need any sauce or onions, but if you want to knock yourself out, OK, onions and sauce.

For a side dish, maybe spinach sautéed quickly with garlic and olive oil.

Nice Skirt

wow, ya know, I always wondered if there was a good way to cook those skirt steaks. I just have never looked into them. Unfortunately I have no grill, being in an apartment, so it will have to wait. However, I will keep this idea on the menu in my mind for a future dining adventure.
